Don't just watch the tutorials, actually do the tutorials (make your own local project while following along). Complete several or more of the basic tutorials and all of the scripting tutorials. The best, fastest and free way to learn is to click on the Learn link at the top of this page. This will not help you in learning Unity or game development, which was your stated desired intention.
Yes re-skinning is simply swapping out sprites and textures (artwork). Reverse engineering when you have no previous experience just doesn't work and will leave you confused and discouraged. You need to learn Unity, it's Editor and C# programming before starting off on you own. Purchasing a complete project or just a bunch of assets is not going to help you the way you think.
